The day before Lent is called “Fat Tuesday.” Catholics normally indulge in rich foods on this day before beginning the 46-day-long liturgical season of fasting and prayer.
“Even our regular customers had extra orders of meat and pork tacos yesterday,” downtown Guadalajara taco chef Chava Vergara said on Ash Wednesday. “Today we’re only serving fish tacos.”
