German Schilman has come a long way to work on a dream in Ajijic. The Argentine-born young man and his family can be found at work Tuesdays through Saturdays behind a small, multicolored storefront on Constitucion.
They are bringing to life a type of business that is unique in Ajijic and unusual in Mexico – a store that sells organic vegetables, dairy and, soon, meat products, along with “everything you need in a house,” said Schilman, such as biodegradable cleaning products, a personal hygiene line and garbage bags made from cornstalks.
